Ingredients
4 corn tortillas
1 ½ cup diced sweet potato, 1-inch cut
1 tbsp olive oil
½ tsp Garlic powder
½ tsp paprika
Salt, to taste
For toppings:
1 cup canned Bean, drained and rinsed
1 cup fresh guacamole
1 cup Pico de gallo
Lime wedges
½ cup Cilantro
Preparation
Wash and peel the sweet potatoes. Cut them into one-inch cubes. Place the diced sweet potatoes in a bowl. Add olive oil, paprika, garlic powder, and salt. Toss.
Place the sweet potato on a parchment-lined baking tray and bake for about 15 to 20 minutes at 400-degree F.
Prepare the black beans per instructions on can.
Once done, remove the tray from the oven and let the sweet potatoes cool a bit.
Take a tortilla, fill with baked sweet potato, and top it off with beans, guacamole, pico de gallo, and freshly chopped cilantro.
Squeeze lime on top and enjoy!
